The ever-changing evening omakase menu is a finely composed journey: dishes such as chawanmushi with North Sea shrimp, salmon in sweet-and-sour Brathering style, veal fillet with crispy salsify tempura, miso sauce and Arima sansho pepper, or the chef's-choice sushi with turbot nigiri reveal the depth of his Japanese-European cuisine.
Elegant and minimalist: clean lines, quiet colours and a focused atmosphere keep the attention firmly on the menu. In summer, a handful of outdoor seats on the small terrace, too.
