Weinstube zur Traube

Hamburg's oldest wine tavern is a wonderfully distinctive place: historic wood paneling, small tables, excellent wine, and a comfortingly precise German-French bistro cuisine. Since 2022, Theres Neuhaus and Kristian Haas have run Traube together as a duo – personally, warmly, and with a great passion for good food and carefully selected wines.

The kitchen
Theres Neuhaus cooks a technically precise, German-French influenced bistro cuisine with seasonal excursions. During our visit, among other things: perfectly matured hand cheese with onion marinade, duck liver paté with toasted butter brioche, North Sea sardines with beans and lemon butter, radicchio with Roquefort and apricots, beef heart tagliata!
What you should know

The kitchen

Be sure to leave room for the small things: Palatinate onion tart, Valrhona chocolate mousse with tossed knobbly cherries, or little Madeleines with beurre noisette and creamy cream. Neuhaus sometimes comes to the table himself to serve in between – here, only two people actually work.

Drink pairing

Kristian Haas is host and sommelier – and when it comes to wine selection, it's best to simply put yourself in his hands. The list is extensive, distinctive, and full of discoveries; many wines are offered by the glass and poured with pleasing generosity. Germany and France are particularly strong, but by no means the only highlights.

Atmosphere

Best enjoyed as a twosome, threesome, or foursome: cozy, warm, historic, and unpretentious. The old wood paneling and carvings have been preserved, and there's also a small terrace on the sidewalk. For larger groups, simply inquire in advance – the distinctive layout naturally limits the available space.

Insider tip

You can also drop by spontaneously for a glass of wine. Those wanting to eat and stay longer should book ahead. Reservations are accepted in two time slots: before 6:45 PM or after 8:15 PM. However, this doesn't mean early guests have to leave again – as a rule, once you're seated, you're welcome to stay the whole evening and happily empty a few glasses.
