Since spring 2026 on the ground floor: the Shio Handroll Bar – also open for walk-ins (Sat 2–10pm, Sun 4–10pm). Tempered rice, crisp nori sheet with tuna, trout with sriracha mayo or scallop with brown butter, sesame and yuzu. Alongside, Ozeki One Cup sake at a good price, cold beer and a selection of the restaurant's wines.

The kitchen

An exclusive omakase experience with its own signature, ten seats, a curated twelve-course menu, two seatings. All guests start at the same time: precise sushi craft, excellent fish, real wasabi – plus creative ideas such as zander in orange dashi, chu-toro with caviar, hamachi with nashi pear. A special experience.

Atmosphere

A hidden spot in the backyard, up the stairs and then to the elegant counter. Eight seats, two seatings, everyone starts together. Focused and communicative at once, personal and surprisingly relaxed.
