The kitchen
Zucchini in three preparations, the blossom fried, with home-made mascarpone. Aubergine, braised, bedded on polenta. A bread salad with beans in a vegan mayonnaise made from salted lemon. White asparagus with lilac and linseed. Unusual combinations, creative and in most cases really good!
What you should know

The setting

Although Thedestraße isn't the prettiest corner of Altona, it's all the more pleasing to spot a cook harvesting herbs on the roof of Maquis. Inside it's purist and cosy, outside plenty of tables line the street in summer.

The philosophy

The name is borrowed from the French resistance movement and stands for an attitude here: to question the existing order of things, including that of bistro cooking itself. Instead of putting meat centre stage, the money saved goes into vegetables of very good quality. That's what makes the difference - and nobody here is thinking of doing without.
