Since March 2020, Julian Stowasser has shaped the kitchen at Lakeside. His culinary roots lie in classic French haute cuisine, honed through stints with top chefs such as Sven Elverfeld at Aqua, Claus-Peter Lumpp at Bareiss, Jan Hartwig at Atelier, and Tetsuya Wakuda in Sydney. Stowasser is not someone who simply follows the crowd.
The same goes for his cooking. It stands on its own, shaped by dynamism and a feel for perfect timing. Stowasser combines French precision with cosmopolitan flavours and a remarkable clarity. His dishes are intensely flavoured, powerful and boldly seasoned, without ever feeling overloaded. A cuisine that lingers long after.
