The kitchen
Creative compositions with fish and seafood form the heart of the kitchen, complemented by unusual dishes such as quail in two courses. The carte blanche menus 'Flora' (vegetarian) and 'Fauna' lead you through the evening with surprising lightness and great depth of flavour. Moreish, elegant and of intricate precision.
The philosophy
Ambitious yet unpretentious, chef and restaurateur Fabio Haebel and his young team develop a nature-oriented cuisine rooted in the North. Uncompromising product quality forms the foundation, from seafood, fish, game and free-range poultry to vegetables, herbs and blossoms from Haebel's own garden just outside Hamburg.
Drink pairing
The wine list is a joy in itself. Natural and biodynamic wines from Germany, France and Italy form the focus. Host Lutz Lonchant and his team advise with as much warmth as expertise. On request, the menu can also be accompanied by a matching pairing and, of course, non-alcoholic options are available too.
Insider tip
The rare seats at the counter offer an immediate proximity to the kitchen – of particular interest to culinarily curious guests looking for a genuine chef's-table evening. Vegan options are not available. Anyone with allergies should let the restaurant know in good time.
