The kitchen
North German fine dining of the new generation. Vegetables, herbs, ferments and fish from the region form the basis of a cuisine that doesn't rely on grand gestures but on precision, depth and seasonal clarity. In 2026, the Guide Michelin thought this was worth a first star.
Atmosphere
Those who manage to secure a table report a relaxed concentration, without any of the stiffness of a starred restaurant. Small, personal and approachable, Arc is meant to feel less like a classic gourmet temple than a neighbourhood restaurant that just happens to have a Michelin star.
At a glance
Hardly any restaurant in Hamburg is recommended as often right now as Arc. The few seats are coveted, reservations hard to come by. Perhaps that's the greatest accolade of all: people don't visit Arc because of its star, but because more and more Hamburgers simply want to eat there.
The philosophy
Three young chefs, one Michelin star and remarkably little fuss about it. At Arc, regionality isn't put on display, it's lived. The kitchen follows the seasons, works closely with producers, and gives its producers a stage of their own too.
